Here is a quick, tasty snack, using only 5 ingredients, that will be completely devoured in a matter of minutes! Make more than you think you’ll need!
While I was AWOL from sevadar duty in LA, I was privileged to cook for one of the Winter Interim Programs in Espanola. The children were off from school in India.
The Siri Singh Sahib/Yogi Bhajan gave me a quick and easy recipe to treat the group who were at the Intensive.
Scrub and cut a good size batch of potatoes into small chunks or sliced thin, like French Fries. Put the cut potatoes in water until ready to use.
Make French Fries.
Heat a few inches of Coconut Oil in a deep stainless pot to a little over 350F. Remember, the temperature will drop when the potatoes are added. Keep the oil at 350.
To prevent spatter, towel the potatoes dry before immersing in the hot oil.
Fry until they turn golden. They should be completely cooked through.
Keep them in a bowl until all are finished.
Here comes the hard part…
Control yourself and wait to eat!
It is well worth it!
Spread all the fried potatoes evenly on a baking sheet.
Sprinkle with Black Salt (Kala Namak), Mango Powder (Amchur), and Cumin Seed (Jeera) or Black Cumin Seed (Kala Jeera).
Put the pan under the broiler and roast those fries.
Turn and stir the potatoes regularly, keeping them coated with the spice mixture.
Grill until everything is sizzling and the edges get darker. This shouldn’t take very long.
Sprinkle with chopped Cilantro.
Serve with Ketchup, Chutney, Pickle (Achar), Salsa, Yogurt, and/or Hot Sauce; if they last that long!
One time, we made several trays for an evening party. A dear friend came over to help chop and prep. She ate the whole first tray!
We put all those potatoes into the simmering Yogurt Curry, just as it was finishing.
