Smog Pancakes

We just flew across the United States and came back with a bit of Jet Lag, diving straight into Daylight Savings Time and the New Moon energy.

Airport food is somewhat encouraging in this modern time.
We had made-to-order fresh, home fried Potatoes and Peppers for breakfast in the Ithaca, NY airport.
For lunch, we found fresh made Veggie Wraps in Philly. There was Pizza.
Dinner was fresh made Bean Burritos (You KNOW you’re in the Southwest!) in Phoenix.
Still, it was far from home cooking.

We came home and immediately cooked up a big plate of, in my opinion, the best remedy for Jet Lag. A bit of Kundalini Yoga and a couple of days of Yogi Bhajan’s notorious, “Anti-Smog Pancakes” will bring you right back where you need to be!

Anti-Smog Pancakes.

“When you’re feeling tired and dragged out on account of air pollution, these spicy pancakes will pick you up.”

This dish can open the lungs and help build the blood.
It may even clean you out!
The 3 Trinity Roots are in this quick dish: Ginger, Onion, Garlic.
The 3 Trinity Herbs are in it: Mint, Basil, Parsley.
All 5 Yogi Tea ingredients are in there: Cardamom, Cloves, Cinnamon, Black Pepper, Ginger.
And, there’s Turmeric for your joints.
Plenty of hot Chilies and Black Pepper help burn out the fog, from Stem to Stern!
Do not leave out the fresh Jalapenos. The oils help open the lungs.

You will need the following ingredients. Don’t skimp on the fire!

2-1/3 cups Garbanzo Flour (Besan)

1 tsp. Clove powder
1 tsp. Cinnamon powder
1 tsp. Cardamom powder
1/4 Tbsp. ground Black Pepper
2 tsp. Fennel seeds
1-1/2 tsp. Caraway seeds
1-1/2 tsp. crushed Mint leaves
1 tsp. – 1-1/2 Tbsp. crushed Red Chilies (some like it hot!)
1-1/2 tsp. Salt
1 tsp. Black Salt (Kal Namak)
2 tsp. Parsley flakes
2 tsp. Sweet Basil
1 tsp. Turmeric powder
2 tsp. Cumin powder

1/2 medium Onion, chopped
3 large cloves Garlic, chopped
1 tsp. finely chopped Ginger root
1-2 Jalapeno Chilies, chopped

Blend Onion, Garlic, Ginger and Jalapenos with 1 cup Water.

Mix other ingredients with about 6 cups Water to make a thickish batter.
Stir in Jalapeno mixture.

Fry in Coconut Oil or Ghee and cook like pancakes.

Serve with home made Yogurt.

Yields 25-30 small pancakes.
